Raw chocolate layer cake
Ingredients:
200g mixed nuts (I use Nuts Royal from Lidl)
150g dried apricots
150g prunes
1 ripe avocado
2 tsp raw honey
2 tsp cocoa powder
Pinch of sea salt if desired
Fruit of your choice
Method:
- Soak the mixed nuts in water for 2-3 hours or overnight.
- Cut the apricots in halves and soak in water for 10-15mins to soften up more.
- Drain the mixed nuts and then whizz in a bowl with a hand blender – or in a food processor.
- Deseed the prunes and chop them up and add to the whizzed up nuts. Add pinch of sea salt if desired.
- Whizz the prunes with the nuts until a sticky mixture forms for the base.
- Plate the mixture onto a plate and shape into the bottom layer of the cake. Pop into the freezer for 10-15 mins to set.
- De-stone and peel the avocado and chop up. Whizz in a clean bowl with a hand blender or the cleaned food processor.
- Drain the apricots, add to the avocado and whizz once more until smooth.
- Add 2 heaped tsp of cocoa powder and honey and mix (or add enough to your taste to make it chocolaty and sweet how you want it).
- Spread this filling over the bottom layer of the cake.
- Add you favourite fruit sliced on top of the cake. I rather like banana and kiwi!
